The Northern California Golf Association
invested $900,000 to remake its food and
beverage operation as a way to entice
more members to golf at Poppy Hills Golf
The association replaced kitchen equip-
ment, floor coverings, tables and chairs,
lighting and glassware. In addition, it
added a weather-protected outdoor patio
to accommodate more seating.
It then hired a new executive chef,
Johnny De Vivo, who oversees two of the
highest-rated restaurants in nearby Carmel
by the Sea. The restaurant uses only locally
sourced products and aims for a menu that
is fun, sustainable and real. Menu items
include house-made bacon, corned beef
and pork bellies that
are crafted in-house. It

Location: Grapevine, Texas
Cowboys Golf Club is the only NFL-themed golf club in the world, and it enjoys
tie-ins with its namesake Dallas team. Its
new owners, Arcis Golf, invested $2.4 million to renovate the clubhouse and expand
the dining options.
Ring of Honor Kitchen & Bar pays homage to Cowboys legends who are members of the team’s official Ring of Honor
at AT&T Stadium. It showcases original
artwork depicting great moments in Dallas
Cowboys history and team memorabilia.
The dining experience features a lively bar
that offers a selection of artisanal cocktails
and Dallas craft beers.
The gastropub features a chef-driven
kitchen with a wide variety of Texas-
inspired menu items, including Dr
Pepper-marinated deep-fried spare ribs,
Outside of the restaurant is Five Points
Patio, named in honor of the iconic star on
the Cowboys’ helmets. The 2,000-square-
foot patio is covered and equipped with
misters for the summer and heaters for
the winter. It has a floor-to-ceiling wood-
burning stone fireplace.
Revenue has grown from $2.5 million to
$3 million since the restaurant reopened.

The restaurant has received rave reviews
from diners for food and service. That success has translated into strong growth in
the bottom line. Revenue has grown from
$996,000, or $21.65 per round, to $1.785
million, or $38.80 per round.
